Mac And Cheese

School is amazing. Really busy.

so far I have completed meat fabrication., fish fabrication, skills 1, skills 2, and on Friday I will finish skills 3. I also have my first cooking practical on Friday which is quite exciting.

I don't really have time to write but I wanted to give you guys a recipe I made up that came out really good. If anyone likes Mac and Cheese then make this because it's really really good.

Mac and Cheese

1 T olive oil
1 c heavy cream
1 c half and half
2 egg yolks
1/2 tsp nutmeg
2 cups sharp cheddar
2 cups fontina
2 cups parm
2 tsp worchesire
1/2 tsp black pepper
3 cup pasta (cooked in boiling water that is as salty as the sea)
1 c bread crumbs
1 cup shitaki mushrooms (stems removed and mushroom caps sliced thin)

Cook the pasta
sautee the mushrooms in olive oil until cooked. ( you can tell mushrooms are almost ready either by of course eating one or their tips start turning translucent)

In a bowl combine heavy cream, 1/2 and 1/2, egg yolks, nutmeg, 1.5 cups cheddar, 1.5 cups fontina, 1.5 cups parm, and worcheshire, and pepper. mix together. Add the cooked pasta. Coat it really well with everything and then pour it into a buttered pan.

cook at 400 for about 15 minutes. at the last remaining five minutes add the rest of the cheese and cover with the bread crumbs. Cook until the bread crumbs are toasty and golden brown.

If you don't like mushrooms then take them out. I also think that something else is needed in this recipe. Maybe an herb? Or maybe some slight heat? I think a diced pepper of some sort would really do what I think might be missing. Regardless though, this recipe kicks ass!
